Geisha Mraz Family Farm

Earlier this year we came across something we never expected: a Geisha grown just two hours from our roastery, in the foothills of Oceanside. It's a rare, delicate cup — honeysuckle florals up front, juicy black currant through the middle, and a warm hint of cinnamon on the finish. California-grown coffee is still in its earliest chapter, and getting to share a page of it with you is something special.

Mraz Family Farms

Mraz Family Farms is a project of Grammy-winning singer-songwriter Jason Mraz. Situated in the foothills of North County San Diego, it is one of the older FRINJ plantings, with trees dating back to 2015. This particular lot represents the farm’s 2025 Geisha harvest. Cherries were hand-picked at peak ripeness, floated to remove defects, pulped, and cold-fermented with an additional yeast-inoculation stage for 66 hours before being washed and laid to dry on raised beds to a stable moisture below 11%.

Yeast Washed

The yeast washed process is a technique borrowed from California’s wine growers. FRINJ utilizes commercially made coffee yeasts to assist with fermentation. This was adopted early on and became standard practice because California is a new coffee origin without an established history of production—its farms and our mill lacked the beneficial microorganisms needed for a full fermentation stage, which caused issues with pectin release during washing. These added yeasts are selected to control the fermentation and ensure full pectin release, and not to impart any specific flavor signature.
