Beneath the shade of guava trees in Fresno, Tolima, Guava Banana was born from resilience and innovation. When avocado farming failed in 2006, the Bayter family transformed El Vergel Estate by planting Red and Yellow Caturra, turning challenge into opportunity. Guided by mentor Miguel Jimenez, they mastered fermentation, blending tradition with science. Each cherry undergoes 48–60 hours of anaerobic fermentation, then slow drying and 45 days of rest to unlock layers of flavor. The result is a vibrant cup bursting with chocolate, guava, plum, and tangerine—an unforgettable expression of El Vergel’s creativity and passion for coffee excellence.
