High in the Masanamaca region of Loja, Ecuador, María Fernanda Tapia and Carlos Iñiguez nurture their Sidra coffee with precision and care. Once perfectly ripe, the cherries are hand-selected and processed using both washed and honey methods. The washed process brings out bright citrus and crisp apple notes, while the honey process enhances the coffee’s sweetness with almond and black tea undertones. After fermentation, the beans are meticulously dried on raised beds, ensuring optimal flavor development. This dedication to craft and terroir results in a vibrant, complex cup that embodies the passion and expertise of its producers.
